Hiro translates to "search" in Japanese, and that's the mentality chef Dan Zhao keeps in mind every day in the utilitarian kitchen of his small Center City East ramen parlor. A veteran of fine dining who caught the ramen bug in his global travels, Zhao's selection constantly changes to reflect the hunt for the "perfect" bowl of soup — the menu's simply named "Hiro Ramen" changes from week to week to reflect innovation, fixation or whim.
