This friendly Fishtown 'cue joint is named after its pitmaster, Robert "Bubba" Kolbasowski, a smoked-meat specialist with the large-in-charge personality to match the size of his home state of Texas. Platters feature well-loved meats like pork ribs, brisket and sausage, but the selection also gets a bit unorthodox, with options like slow-smoked chicken wings and pulled seitan ("Dare to dance with the devil!" taunts the menu). There's also plenty of booze to get your butt in a stool, plus Kolbasowski's smoker is a draw on its own — the thing has eight distinct chambers and weighs more than a ton.
