Although much of the wood furniture and flooring has been reclaimed from former uses, it’s all been shined up so thoroughly so as to convey a clean, simple, airy and rustic aesthetic where framed portraits, hanging plants and functionally elegant wine glasses number among the most eye-catching elements in this minimalistic space. The design serves to highlight the updated American food, all sourced and prepared with a careful eye toward sustainability and working in harmony with nature. From the absence of overfished seafood to the herb garden on the roof (no, it’s not open to the public), the owners’ philosophies are clear, as well as pleasing to the progressive 30-to-70-year-old erudite diners who choose to spend their earth-conscious dollars at such establishments.
